Ingredients
  

For the dip

  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 cup whole milk
  • 2/3 cup beer Use a flavorful beer for best taste.
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups sharp cheddar cheese, shredded Can experiment with other cheese types.

Preparation

  • Heat butter in a large saucepan over medium heat.
  • Add the flour and whisk until combined and cooked through, about 1 minute.
  • Slowly add the milk, beer, Worcestershire sauce, Dijon mustard, garlic powder, paprika, salt, and black pepper, whisking until everything is nicely blended.
  • Stirring constantly, cook this mixture until it has thickened slightly, about 3-5 minutes.
  • Add the shredded cheese and whisk until smooth.
  • Taste for seasoning, and serve warm.

Notes

Serve with tortilla chips, pretzels, or veggies. Store leftovers in an airtight container for up to three days, or freeze for up to three months. Reheat gently, adding a splash of milk if thickened.
