  • 2 tablespoons olive oil For cooking.
  • 1 teaspoon garlic (minced)

For the Mashed Potatoes

  • 2 lbs potatoes (peeled and cubed) Use for mashing.
  • 1/2 cup milk Use low-fat for a healthier option.
  • 4 tablespoons butter Can substitute with Greek yogurt for a healthier variant.

Cooking the Beef Stir-Fry

  • Heat olive oil in a large skillet over medium-high heat.
  • Add minced garlic and sliced beef; cook until browned.
  • Add mixed vegetables and soy sauce, stirring until vegetables are tender.

Making the Mashed Potatoes

  • In a separate pot, boil potatoes until tender, then drain.
  • Mash potatoes with milk, butter, salt, and pepper until creamy.

Serving

  • Serve the beef stir-fry alongside the mashed potatoes.
  • Garnish with sesame seeds or green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator. They will stay fresh for about 3 to 4 days. Reheat in the microwave or skillet until warmed through.
