  • 1 medium bell pepper, diced Any color bell pepper can be used.
  • 1 medium onion, diced Yellow or white onion works best.
  • 2 cloves garlic, minced
  • 1 teaspoon cumin Adds a warm flavor.
  • 1 teaspoon paprika For a smoky flavor.
  • to taste Salt and pepper Adjust according to taste.

Instructions
 

Preparation

  • Rinse the quinoa under cold water.
  • In a pot, combine quinoa and beef broth (or water) and bring to a boil.
  • Reduce heat to low, cover, and simmer for about 15 minutes, or until quinoa is cooked and water is absorbed.

Cooking

  • In a large skillet over medium heat, cook the ground beef until browned.
  • Add the onion and garlic, and sauté until softened.
  • Stir in the diced bell pepper, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.

Serving

  • Serve the beef mixture over the quinoa, garnished with fresh parsley or cilantro.

Notes

You can customize this dish by adding other vegetables like zucchini, corn, or spinach. For added richness, prefer beef broth over water when cooking quinoa. The dish stores well and can be reheated easily.
