  • 1 lb beef chuck, cubed Choose a high-quality beef chuck for the best flavor.
  • 1 cup barley
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth You can replace with vegetable broth for a vegetarian option.
  • 2 leaves bay leaves Remove before serving.
  • Salt and pepper to taste
  • Fresh parsley, for garnish Add for color and flavor.

Preparation

  • In a large pot, brown the beef cubes over medium heat.
  • Add the onions, carrots, and celery, cooking until the vegetables are soft.
  • Stir in the garlic and cook for an additional minute.
  • Next, add the barley, beef broth, bay leaves, salt, and pepper.
  • Bring to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked.
  • Be sure to remove the bay leaves before serving and garnish with fresh parsley.

Notes

For a heartier meal, serve with crusty bread or a side salad. Can be stored in the fridge for up to 3 days or frozen for up to 3 months.
