  • 2 pieces flatbreads or naan You can use store-bought naan for convenience.
  • 1 cup cooked shredded chicken Rotisserie chicken works well.
  • 1/2 cup barbecue sauce Plus extra for drizzling.
  • 1 cup shredded mozzarella cheese You can substitute other types of cheese.
  • 1/4 cup red onion, thinly sliced Provides a nice crunch.
  • 1/4 cup chopped fresh cilantro For garnish.
  • to taste tablespoon olive oil For brushing.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, toss the shredded chicken with 1/2 cup of barbecue sauce until it is well coated.
  • Brush each flatbread lightly with olive oil and place them on the prepared baking sheet.
  • Spread a thin layer of barbecue sauce over each flatbread.
  • Top with mozzarella cheese, BBQ chicken, and red onion slices.

Cooking

  • Bake for 10-12 minutes, or until the cheese is melted, bubbly, and the edges are golden brown.
  • Remove from the oven, sprinkle with chopped cilantro, and drizzle with extra barbecue sauce if desired.
  • Slice and serve warm.

Notes

These pizzas can be served as a main dish or as appetizers. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat at 350°F (175°C).
