For the Pizzas

  • 2 pieces flatbreads or naan Use any flatbread of your choice.
  • 1 cup cooked shredded chicken Store-bought rotisserie chicken can be used.
  • 1/2 cup barbecue sauce Use your favorite BBQ sauce.
  • 1 cup shredded mozzarella cheese For a smokier flavor, consider using smoked cheddar.
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro Optional, for garnish.
  • Olive oil for brushing Olive oil Brushing olive oil on flatbreads adds flavor.

Preparation

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a bowl, toss the shredded chicken with 1/2 cup of barbecue sauce until it is well coated.
  • Brush each flatbread lightly with olive oil and place them on the prepared baking sheet.
  • Spread a thin layer of barbecue sauce over each flatbread.
  • Top each flatbread with mozzarella cheese, BBQ chicken, and red onion slices.

Cooking

  • Bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  • Remove from the oven, sprinkle with chopped cilantro, and drizzle with extra barbecue sauce if desired.
  • Slice and serve warm.

Notes

For extra flavor, try different toppings or sauces. Make ahead by preparing toppings in advance. Store leftovers in an airtight container for 2-3 days.
