  • 1 cup cooked shredded chicken Use leftover chicken for quick preparation.
  • 0.5 cup barbecue sauce Plus extra for drizzling.
  • 1 cup shredded mozzarella cheese Can substitute with other cheeses like cheddar or pepper jack.
  • 0.25 pieces red onion Thinly sliced.
  • 0.25 cup chopped fresh cilantro For garnishing.
  • as needed tablespoon Olive oil For brushing the flatbreads.

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, toss the shredded chicken with 1/2 cup of barbecue sauce until well coated.
  • Brush each flatbread lightly with olive oil and place them on the prepared baking sheet.
  • Spread a thin layer of barbecue sauce over each flatbread.
  • Top each flatbread with mozzarella cheese, BBQ chicken, and red onion slices.

Baking

  • Bake in the oven for 10–12 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  • Remove from the oven, sprinkle with chopped cilantro, and drizzle with extra barbecue sauce if desired.
  • Slice and serve warm!

Notes

These flatbread pizzas can be customized with different toppings like sliced bell peppers or jalapeños, and leftover rotisserie chicken can be used for convenience. For a vegetarian version, replace chicken with grilled vegetables or black beans and ensure the BBQ sauce is meat-free.
