  • 1 lb ground beef Can be substituted with turkey or chicken.
  • 1/2 cup breadcrumbs Gluten-free breadcrumbs can be used if needed.
  • 1/4 cup BBQ sauce Add more for extra moisture if needed.
  • 1/4 cup ketchup
  • 1/4 cup diced onion
  • 1/4 cup diced green pepper
  • 1 piece egg
  • 6 slices bacon Can substitute with turkey bacon.
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, BBQ sauce, ketchup, diced onion, diced green pepper, egg, salt, and pepper.
  3. Mix until everything is well combined.
  4. Shape the meat mixture into a loaf and place it in a baking dish.
  5. Lay the bacon slices on top of the meatloaf, tucking the ends underneath.
  6. Bake in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Remove from the oven and let it rest for 5 minutes before slicing and serving.

Notes

For best results, let the meatloaf rest before slicing to ensure juices redistribute. Experiment with spices or add cheese for variations.
