Ingredients
  

For the cake

  • 1 tablespoon milk
  • 2 medium bananas, mashed Make sure they are very ripe for the best flavor.
  • 2 eggs eggs
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup white granulated sugar
  • 1/2 teaspoon vanilla
  • 3/4 cup milk
  • 1 1/4 cups all-purpose unbleached flour
  • 1 1/2 cups all-purpose unbleached flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

For the streusel topping

  • 1/4 cup confectioners sugar
  • 1/2 cup butter
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a stand mixer, combine the softened butter, brown sugar, vanilla, milk, eggs, and mashed bananas.
  • In a separate bowl, mix together the flour, baking powder, cinnamon, baking soda, and salt.
  • Pour the flour mixture into the stand mixer and mix until everything is well combined.
  • Grease and dust a 9x9 baking pan with flour.
  • Pour the cake batter into the prepared pan and top it with streusel.

Baking

  • Bake in the preheated oven for 35-40 minutes.
  • While the cake cools, make the icing by combining milk and confectioners sugar in a small saucepan over low heat. Whisk until it turns into a nice glaze. Add more milk if needed to thin the icing’s consistency.
  • Once the cake has cooled, drizzle the icing over the top.

Notes

This delicious coffee cake is best served warm. Slice it into squares and enjoy it with a steaming cup of coffee or tea. You can also add a dollop of whipped cream or yogurt on top for extra sweetness. To store your Banana Bread Coffee Cake, wrap it tightly in plastic wrap or place it in an airtight container.
