Ingredients
  

For the Cake

  • 1.5 cups mashed ripe bananas (about 3-4 bananas) Use very ripe bananas for the best flavor.
  • 2 cups all-purpose flour Can substitute with whole wheat or gluten-free flour if needed.
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure it's softened for easy mixing.
  • 3/4 cup granulated sugar Can be reduced for less sweetness.
  • 1/4 cup brown sugar
  • 2 large eggs Add one at a time while mixing.
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or Greek yogurt Adds moisture and richness.
  • 1 tablespoon poppy seeds (optional) For added texture and flavor.

For the Frosting

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (if needed for spreading consistency) Add as needed.

Optional Garnishes

  • Fresh banana slices For garnishing.
  • Chopped walnuts or pecans Adds crunch.
  • Extra sprinkle of poppy seeds For decoration.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch pan or two 9-inch round pans.
  • In a bowl, cream the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and mashed bananas.
  • In another bowl, mix the dry ingredients: flour, baking soda, salt, and poppy seeds.
  • Gradually add the dry mixture to the banana mixture, alternating with the sour cream. Be careful not to overmix.
  • Pour the batter into your prepared pan and bake for 30–35 minutes or until a toothpick inserted comes out clean.
  • Let the cake cool completely before frosting.

To Make the Frosting

  • Beat the softened cream cheese and butter together until smooth and creamy.
  • Gradually add the powdered sugar, mixing until fluffy.
  • Stir in the vanilla extract and thin with milk if needed for spreading consistency.

Assemble & Serve

  • Spread the frosting over the cooled cake. You can garnish with fresh banana slices, chopped nuts, or a light sprinkle of poppy seeds.
  • If needed, chill for 10–15 minutes to make cutting easier.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze slices tightly wrapped for later enjoyment. To make muffins, pour the batter into a muffin tin and bake for 18-20 minutes.
