Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the mushrooms with oil, balsamic vinegar, and soy sauce until they’re thoroughly coated.
  3. Spread the mushrooms on a baking sheet in a single layer to allow for even roasting.

Notes

Store cooled leftovers in an airtight container in the fridge for up to 3-4 days. Reheat in the oven at 350°F (175°C) for about 10 minutes or in the microwave carefully to avoid mushiness.
