  • 2 pieces Ripe pears (Bosc or Anjou) Pears should be ripe but firm.
  • 4 oz Feta cheese, crumbled or diced Use good quality feta.
  • 2 tbsp Honey A floral honey works beautifully.
  • 1/2 cup Dried cranberries For tart sweetness.
  • 1 tbsp Butter or olive oil To coat the pears.
  • 1 tbsp Lemon juice Just a splash for brightness.
  • 1/2 tsp Ground cinnamon For warmth.
  • 1 tsp Vanilla extract For added flavor.
  • 1 pinch Salt To balance the sweetness.
Optional Toppings
  • 1/4 cup Chopped nuts (e.g. walnuts or pistachios) For added crunch.
  • 1 tbsp Fresh mint, chopped For garnish.
  • 1 cup Greek yogurt or vanilla ice cream Optional to serve.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a small baking dish.
  2. Halve the pears lengthwise and scoop out the cores. Trim the bottoms if necessary, so they sit flat.
Baking
  1. Place the pears cut-side up in the baking dish. Brush with melted butter or olive oil.
  2. Drizzle each pear half with honey. Sprinkle with cinnamon, vanilla, salt, and lemon juice.
  3. Bake for 15 minutes, then remove and spoon some pan juices over the pears.
  4. Add crumbled feta to the centers and scatter cranberries on top. Return to the oven for another 10 minutes.
  5. For a caramelized top, broil for 1 to 2 minutes, watching closely.
  6. Allow the pears to rest for 5 minutes before serving.

Notes

Serve warm, with options for yogurt or ice cream for a delightful contrast. Best enjoyed fresh but can be stored for up to 4 days in the fridge.
