  • ½ teaspoon ½ teaspoon salt
  • 1 cup 1 cup shredded parmesan cheese Generously top zucchini slices for a flavorful crust.

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Slice the zucchini into approximately ¼ inch thick rounds.
  3. Drizzle the zucchini slices with olive oil and toss gently to coat each slice.
  4. Lay the zucchini slices in a single layer on a baking sheet.
  5. Sprinkle evenly with salt and pepper.
  6. Top each slice with shredded parmesan cheese.
Baking
  1. Bake for about 10 minutes or until the zucchini is tender.
  2. Switch the oven to broil mode and broil for 1-2 minutes until the cheese turns golden brown.
  3. Remove from the oven and serve immediately.
