  • 2 cups cooked shredded chicken preferably rotisserie
  • 4 ounces cream cheese softened to room temperature
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup salsa your preferred heat level
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped green onions or fresh cilantro optional
  • 8 to 10 pieces small flour or corn tortillas 6-inch size

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine shredded chicken, cream cheese, cheddar cheese, salsa, cumin, chili powder, salt, pepper, and green onions or cilantro if using.
  3. Lay out a tortilla and place some of the chicken mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down on a baking sheet.
  4. Repeat with the remaining tortillas and filling.
  5. Bake in the preheated oven for about 15-20 minutes, or until golden and crispy.
  6. Serve warm and enjoy!

Notes

Pair with a refreshing side salad, guacamole, sour cream, corn salsa, or pico de gallo. Store leftovers in an airtight container in the fridge for up to three days or freeze wrapped tightly for up to two months.
