Preparation
- Preheat your oven to 400 degrees Fahrenheit.
- In a shallow bowl, combine fresh lemon juice, extra virgin olive oil, and melted butter. Set this lemon sauce aside and do not add the garlic yet.
- In another shallow bowl, mix together all-purpose flour, ground coriander, sweet Spanish paprika, ground cumin, salt, and black pepper.
- Pat the cod fillets dry with paper towels.
- Dip each cod piece first into the lemon sauce, then dredge in the seasoned flour mixture, shaking off any excess flour.
Cooking
- Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat.
- Add the fish pieces once the oil shimmers. Sear each side for about 2 minutes, then remove from heat.
- Stir minced garlic into the reserved lemon sauce.
- Drizzle the garlicky lemon sauce over the seared fish in the skillet.
- Place the skillet in the preheated oven and bake for about 10 minutes, checking at 8 minutes for doneness.
Serving
- Sprinkle chopped parsley over the baked cod before serving.
Notes
Serve alongside a light salad, steamed vegetables, or fluffy couscous. Experiment with spices or incorporate fresh herbs for variation.
