Ingredients
  

Fish and marinade

  • 1.5 lb Cod fillet pieces 4-6 pieces
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil for marinating and cooking
  • 2 tbsp melted butter
  • 5 cloves garlic, minced

Coating mixture

  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Garnish

  • 1/4 cup chopped fresh parsley leaves for garnish

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a shallow bowl, combine fresh lemon juice, extra virgin olive oil, and melted butter. Set aside.
  • In another shallow bowl, mix together all-purpose flour, ground coriander, sweet Spanish paprika, ground cumin, salt, and black pepper.
  • Pat the cod fillets dry with paper towels.
  • Dip each piece into the lemon sauce, then dredge in the seasoned flour mixture, shaking off excess flour.
  • Heat 2 tablespoons of olive oil in a cast-iron skillet over medium-high heat.

Cooking

  • Sear each side of the fish pieces for about 2 minutes until color develops.
  • Remove the skillet from heat and stir minced garlic into the reserved lemon sauce.
  • Drizzle the garlicky lemon sauce over the seared fish fillets.
  • Place the skillet in the preheated oven and bake until the fish flakes easily with a fork, about 10 minutes.
  • Begin checking at 8 minutes to avoid overcooking.
  • Remove the skillet from the oven and sprinkle chopped parsley over the fish.

Notes

For a kick, add chili powder or cayenne to the coating. Substitute ghee for some of the butter for added richness. Store leftovers in an airtight container for 2-3 days.
