  • 1.5 lb Cod fillet pieces (4-6 pieces)
  • 1/4 cup chopped fresh parsley leaves For garnishing
  • 5 tbsp fresh lemon juice Provides flavor

  • 2 tbsp melted butter Adds richness to the sauce
  • 5 cloves garlic, minced Essential for flavor
Seasoning Coating
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt Adjust to taste
  • 1/2 tsp black pepper Adjust to taste

Method
 

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a shallow bowl, combine fresh lemon juice, extra virgin olive oil, and melted butter. Set this lemon sauce aside and do not add the garlic yet.
  3. In another shallow bowl, mix together all-purpose flour, ground coriander, sweet Spanish paprika, ground cumin, salt, and black pepper.
  4. Pat the cod fillets dry with paper towels.
  5. Dip each cod piece first into the lemon sauce, then dredge in the seasoned flour mixture, shaking off any excess flour.
Cooking
  1. Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat.
  2. Add the fish pieces once the oil shimmers. Sear each side for about 2 minutes, then remove from heat.
  3. Stir minced garlic into the reserved lemon sauce.
  4. Drizzle the garlicky lemon sauce over the seared fish in the skillet.
  5. Place the skillet in the preheated oven and bake for about 10 minutes, checking at 8 minutes for doneness.
Serving
  1. Sprinkle chopped parsley over the baked cod before serving.

Notes

Serve alongside a light salad, steamed vegetables, or fluffy couscous. Experiment with spices or incorporate fresh herbs for variation.
