Ingredients
  

For the Meatloaf
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 lb ground pork
  • 1 cup bread crumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1 cup shredded Swiss cheese Can substitute with sharp cheddar or pepper jack for spice.
  • 2 cloves garlic, minced
  • 1 onion diced
  • 1 cup mushrooms, sliced
  • 6 slices bacon For wrapping the meatloaf.
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • to taste salt and pepper Adjust to personal preference.

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the ground beef and ground pork.
  3. Add in the bread crumbs, diced onion, minced garlic, sliced mushrooms, and shredded Swiss cheese.
  4. Crack in the eggs, then pour in the ketchup and Worcestershire sauce.
  5. Season with salt and pepper, then mix until fully combined.
  6. Line a loaf pan with the strips of bacon, ensuring they cover the bottom and sides completely.
  7. Carefully press the meat mixture into the loaf pan on top of the bacon, shaping it into a loaf.
Baking
  1. Bake in your preheated oven for about 1 hour, or until cooked through and the bacon is crispy.
  2. Let cool for a few minutes before slicing.

Notes

Leftovers can be stored in the fridge for 3 to 4 days. For longer storage, freeze individual slices for up to three months.
