  • 4 slices sourdough bread
  • 1 medium avocado, sliced or mashed Use freshly mashed for best flavor.
  • 1 medium tomato, thinly sliced
  • 1 cup shredded mozzarella cheese You can experiment with different types of cheese.
  • 2 tablespoons butter, softened
  • 1/2 teaspoon garlic powder Sprinkle on buttered bread.
  • 1 pinch salt Add to mashed avocado.

Preparation

  • Heat a nonstick skillet or griddle over medium-low heat.
  • Mash avocado with a pinch of salt and set aside.
  • Butter one side of each slice of bread and sprinkle with garlic powder.

Cooking

  • Place one slice of bread, buttered side down, on the skillet.
  • Layer with half the cheese, avocado, tomato slices, and remaining cheese.
  • Top with another slice of bread, buttered side up.
  • Cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
  • Remove from heat, let rest for 1 minute, then slice and serve hot.

Notes

Pair with a fresh salad or seasoned potato chips. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to a month.
