  • 3 cloves garlic, minced Aromatic base.
  • 1 tablespoon fresh ginger, grated Adds warmth and depth.
  • 1/4 cup low-sodium soy sauce For seasoning.

Vegetables

  • 1 cup bell peppers, sliced Any color works.
  • 1 cup snap peas Fresh or frozen.
  • 1 cup bok choy, chopped Or any green of choice.

Preparation

  • Gather all ingredients. If using frozen shrimp, ensure they are fully thawed and pat them dry.

Cooking

  • Heat a large skillet or wok over medium-high heat. Add vegetable oil and allow it to shimmer.
  • Add minced garlic and grated ginger to the hot oil, cooking for about 30 seconds until fragrant.
  • Add the shrimp to the pan, cooking for 2-3 minutes on each side until they turn pink and opaque. Sprinkle with salt to taste.
  • Once the shrimp are cooked, add bell peppers, snap peas, and bok choy, stir-frying for 2-3 minutes until the vegetables are vibrant and slightly tender.
  • Drizzle soy sauce over the shrimp and vegetables, tossing to coat evenly. Add sesame oil for extra flavor.
  • Serve on a bed of rice, in lettuce wraps, or alongside quinoa.

Notes

Experiment with different vegetables to change up the flavor and nutrition profile. Store leftovers in an airtight container in the refrigerator for up to three days.
