Salad Base
  • 2 small bags coleslaw mix (about 12 cups)
  • 4 cups rotisserie chicken (finely chopped)
  • 1.5 cups toasted sliced almonds or cashews
  • 1.5 cups dried cranberries (Orange Cranberries from Trader Joe’s)
  • 0.75 cups red onion (finely diced)

Preparation
  1. In a large bowl, combine the coleslaw mix and chopped rotisserie chicken.
  2. Add the toasted almonds or cashews, dried cranberries, and diced red onion.
  3. Toss the ingredients together until well mixed.
  4. Serve chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator for best freshness, ideally consumed within 3-5 days. For a heartier meal, serve with rice or quinoa.
