Ingredients
  

For the dip base

  • 3 tablespoon butter Unsalted preferred
  • 3 tablespoon all-purpose flour
  • 1/2 cup Blue Moon beer (or other pale ales)
  • 1/2 cup milk Whole milk recommended
  • 1 clove garlic, thinly minced
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon hot sauce Adjust to taste
  • 1/2 teaspoon onion powder

Cheese mixture

  • 1 1/3 cup Colby jack cheese, shredded from block Freshly shredded for best melting
  • 1 1/3 cup sharp white cheddar cheese, shredded from block Freshly shredded for best melting
  • Salt and pepper to taste

For serving

  • Tortilla chips or pretzels For dipping

Preparation

  • In a saucepan over medium heat, melt the butter.
  • Add in the flour and whisk until well combined to create a roux. Cook for about a minute.
  • Slowly add in the beer and the milk while whisking to allow the mixture to thicken.
  • Stir in the garlic, Worcestershire sauce, mustard, onion powder, and hot sauce.
  • Stir constantly until the mixture thickens, which can take up to 5 minutes.
  • Remove the pan from the heat and gradually add the shredded cheddar and Colby jack cheeses, stirring until melted and smooth.
  • Taste and add salt and black pepper to taste.

Serving

  • Transfer the dip to a bowl and serve warm with tortilla chips or pretzels.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Gently reheat on the stovetop over low heat, adding a splash of milk if necessary.
