Ingredients
  

For the dip

  • 3 tablespoon butter
  • 3 tablespoon all-purpose flour
  • 1/2 cup Blue Moon beer (or other pale ales)
  • 1/2 cup milk
  • 1 clove garlic (thinly minced)
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon hot sauce
  • 1/2 teaspoon onion powder
  • 1 1/3 cup Colby jack cheese (shredded from block)
  • 1 1/3 cup sharp white cheddar cheese (shredded from block)
  • Salt and pepper to taste
  • Tortilla chips or pretzels for serving

Instructions
 

Preparation

  • In a saucepan over medium heat, melt the butter.
  • Add the flour and whisk until well combined to create a roux. Cook for about a minute.
  • Slowly add in the beer and the milk while whisking to allow the mixture to thicken.
  • Stir in the garlic, Worcestershire sauce, mustard, onion powder, and hot sauce.
  • Stir constantly until it thickens, which can take up to 5 minutes.
  • Remove the pan from the heat and gradually add the shredded cheddar and Colby jack cheeses, stirring until melted and smooth.
  • Taste and add salt and black pepper to taste.
  • Transfer to a bowl and serve the dip warm with tortilla chips or pretzels.

Notes

To store leftover dip, place it in an airtight container and refrigerate for up to four days. Reheat on the stovetop over low heat when ready to enjoy. You can freeze the dip for up to 3 months; thaw it overnight in the fridge before reheating.
