  • 1 cup Zucchini, grated You can use both green and yellow varieties.
  • 1 cup Apple, peeled and chopped Granny Smith or Honeycrisp work great.
  • 1.5 cups All-purpose flour
  • 1 cup Brown sugar Light or dark, depending on your preference.
  • 0.5 cup Granulated sugar
  • 2 large Eggs, beaten
  • 0.5 cup Olive oil or melted butter
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.5 tsp Salt
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 1 tsp Vanilla extract

Brown Sugar Frosting

  • 0.5 cup Butter, softened
  • 1 cup Brown sugar
  • 2 tbsp Milk
  • 1 tsp Vanilla

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9"x5" loaf pan or line it with parchment paper.
  • Prepare the zucchini and apple: Grate the zucchini (no need to peel it) and chop the apple into small pieces. Set aside.
  • Mix wet ingredients: In a large bowl, whisk the eggs, granulated sugar, brown sugar, and oil until smooth. Stir in the vanilla.
  • Combine dry ingredients: In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the grated zucchini and chopped apple.
  • Pour into the pan: Transfer the batter to your prepared loaf pan and smooth the top.

Baking

  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool down: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Frosting

  • For the brown sugar frosting, combine softened butter, brown sugar, milk, and vanilla. Whip until light and fluffy, then spread it generously over the cooled bread.

Notes

Grate zucchini finely to help it combine seamlessly into the batter. Measure accurately to ensure proper texture.
