Ingredients
  

Cookie Dough Base

  • 2 cups All-purpose flour Sifted, can substitute with gluten-free mix
  • ½ cup Unsalted butter At room temperature; margarine can be used for dairy-free
  • ½ cup Granulated sugar
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt A pinch to balance sweetness
  • 1 large Egg Binds ingredients together
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Cinnamon Adds flavor

Apple Filling

  • 2 medium Apples Peeled and diced; Granny Smith or Honeycrisp suggested
  • 2 tablespoons Brown sugar For sweetness in filling
  • 1 teaspoon Cinnamon
  • 1 pinch Nutmeg Enhances flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  • Add in the egg and vanilla extract, mixing until well-blended.
  • In a separate bowl, sift together the flour, baking powder, salt, and cinnamon.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • For the filling, peel and dice the apples, tossing them with brown sugar, cinnamon, and nutmeg, then sauté on medium heat for about 5 minutes.

Assembly

  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each.
  • Create a small indentation in each cookie and fill with a spoonful of the sautéed apple filling, covering with more cookie dough.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  • Optionally dust with powdered sugar or drizzle with caramel sauce before serving.

Notes

Ensure to not overwork the dough for tender cookies. Store in an airtight container for up to five days.
