Ingredients

Main Ingredients

  • 4 cups cooked beans (navy, pinto, or kidney) Use dried beans soaked overnight or canned beans, drained and rinsed.
  • 3 cups apples (a mix of Granny Smith and Honeycrisp) Core and chop into small cubes; leave skin on for added fiber.
  • 1 cup brown sugar Replace with maple syrup or honey for a healthier option.
  • 1 tbsp ground cinnamon
  • 1 tsp nutmeg
  • 1 stick unsalted butter Use coconut oil for a dairy-free alternative.
  • 1 tsp vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • If using dried beans, soak them overnight and then boil until tender. If using canned beans, simply drain and rinse them well.
  • Core and chop your apples into small cubes, leaving the skin on for added fiber and richness.

Combination and Baking

  • In a large mixing bowl, combine the cooked beans, chopped apples, brown sugar, butter, and spices. Stir until everything is well-coated.
  • Pour the mixture into a greased baking dish. Pack it in tightly.
  • Cover the dish with aluminum foil and bake for about 30 minutes. Then, remove the foil and bake for another 15-20 minutes until the top is bubbly and golden brown.
  • Allow the dish to cool for a few minutes before serving.

Notes

For a deeper flavor, let the baked beans sit in the fridge overnight before reheating and serving. This resting period allows the flavors to meld beautifully.
