Bread Pudding Base
  • 6 cups bread cubes (brioche, challah, or French bread) Use day-old bread for better absorption of custard.
  • 2 cups peeled and diced apples (Honeycrisp, Gala, or Granny Smith) Feel free to swap apples for pears.
  • 3 large eggs
  • 1 cup milk Can replace with a flavored alternative like almond or coconut milk.
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 teaspoon cinnamon Experiment with other spices like nutmeg or allspice.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
Crumble Topping
  • 1 cup crumble topping Optional, can be enhanced with nuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a large bowl, combine the bread cubes, diced apples, and half of the crumble topping, if using. Stir gently to mix.
  3. In another bowl, whisk together the eggs, milk, heavy cream, sugar, cinnamon, vanilla extract, and salt until well combined.
  4. Pour the egg mixture over the bread and apple mixture. Gently fold everything together to ensure even coating.
  5. Transfer this mixture into your prepared baking dish and sprinkle the remaining crumble topping on top.
Baking
  1. Bake for 45-50 minutes, or until the pudding is set and the top is golden brown.
  2. Allow it to cool slightly before serving.

Notes

Serve warm with vanilla ice cream or caramel sauce. Dust with powdered sugar for a lovely presentation. Store leftovers in an airtight container for up to three days; can freeze for up to three months.
