Ingredients
  

Crust Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted

Cheesecake Filling

  • 1 cup sugar
  • 3 packages (8 ounce) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 pieces eggs
  • 2 cups diced apples Granny Smith recommended for tartness.
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup sour cream Optional topping before serving.

Preparation

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, mix together the crushed graham crackers and melted butter. Press the mixture firmly into the bottom of a springform pan to form the crust.

Making the Filling

  • In a large bowl, beat the cream cheese and sugar together until smooth.
  • Add the vanilla extract and mix well.
  • Add the eggs one at a time, mixing on low speed until just combined.
  • Fold in the diced apples and spices.
  • Pour the cheesecake batter over the crust in the springform pan.

Baking

  • Bake for 60-70 minutes or until the center is set and the edges are slightly golden.
  • Let cool, then refrigerate for at least 4 hours before serving.
  • Before serving, spread a layer of sour cream on top for added flavor.

Notes

Ensure cream cheese is at room temperature for a smoother batter. Don’t overmix after adding the eggs to avoid cracking. Use Granny Smith apples for tartness. Bake on a lower rack to prevent browning. Add lemon juice for extra flavor.
