For the peach filling

  • 6-8 pieces ripe fresh peaches, peeled, pitted, and sliced Choose ripe peaches for the best flavor.
  • 1/2 cup granulated sugar For peaches.
  • 1/4 cup light brown sugar, packed For peaches.
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch

For the topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar For topping.
  • 1/2 cup light brown sugar, packed For topping.
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  • In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, 1/4 cup light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.

Making the Topping

  • In a separate medium bowl, whisk together the flour, 1/2 cup granulated sugar, 1/2 cup light brown sugar, baking powder, and salt.
  • Pour in the melted butter and milk into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are fine.

Baking

  • Carefully spoon the topping mixture evenly over the peaches in the baking dish. It will look like a thin batter.
  • Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  • Remove from the oven and let cool for at least 15 minutes before serving to allow the filling to set slightly.

Serving

  • Serve warm, perhaps with a scoop of vanilla ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat in microwave or oven before serving.
