  • 2 teaspoons vanilla extract
  • 5 cups sweetened coconut flakes Use sweetened coconut flakes for best flavor.
  • 2 cups semi-sweet chocolate chips Feel free to add more for extra chocolatey taste.
  • 3/4 cup almonds Can be substituted with walnuts or pecans.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine sweetened condensed milk and vanilla extract.
  • Stir in the coconut flakes until well mixed.
  • Fold in the chocolate chips and almonds.
  • Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are golden.
  • Allow to cool before serving.

Notes

Store any leftover cookies in an airtight container at room temperature for up to a week. For longer freshness, freeze them for up to three months, separating layers with parchment paper to prevent sticking.
