  • 2 teaspoons vanilla extract
  • 5 cups sweetened coconut flakes
  • 2 cups semi-sweet chocolate chips
  • 3/4 cup almonds

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sweetened condensed milk and vanilla extract.
  • Stir in the sweetened coconut flakes, semi-sweet chocolate chips, and almonds until well combined.
  • Drop spoonfuls of the mixture onto a lined baking sheet.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra chocolate flavor, drizzle melted chocolate on top of the baked cookies. You can also use dark chocolate chips for a richer taste. Make sure not to overbake the cookies; they should be lightly golden at the edges. Store any leftover cookies in an airtight container at room temperature for up to one week or freeze for up to three months.
