Cookie Mixture

  • 14 ounces sweetened condensed milk Use for the right amount of sweetness and moisture.
  • 2 teaspoons vanilla extract
  • 5 cups sweetened coconut flakes Unsweetened can be used but may result in less sweetness.
  • 2 cups semi-sweet chocolate chips Feel free to add more chocolate if desired.
  • 3/4 cup almonds Can substitute with other nuts like walnuts or pecans.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the sweetened condensed milk and vanilla extract.
  • Stir in the sweetened coconut flakes and mix until well combined.
  • Fold in the chocolate chips and almonds.
  • Drop spoonfuls of the mixture onto baking sheets lined with parchment paper.
  • Bake for 10-12 minutes until the edges are golden.
  • Let them cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Store in an airtight container at room temperature for about a week or freeze for up to three months. Topping with melted chocolate is a delicious option.
