Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Can substitute with gluten-free flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 3 large eggs Can substitute with flax eggs for vegan option
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
Add-ins
  • 1 cup sliced almonds Toasted for extra flavor, if desired

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs and mix in both the vanilla and almond extracts.
  4. Combine the wet ingredients with the dry ingredients and fold in the sliced almonds.
Baking
  1. Shape the dough into a log on the prepared baking sheet.
  2. Bake for 25 minutes or until the log is golden brown.
  3. Once cooled slightly, slice the log into biscotti shapes and return the slices to the oven.
  4. Bake for an additional 10-15 minutes until crispy.
  5. Let them cool completely before serving.

Notes

Store biscotti in an airtight container at room temperature for up to two weeks. Freeze for up to three months.
