Ingredients
  

For the marinade

  • 1 tablespoon grated fresh ginger
  • 4 cloves minced garlic
  • 1/4 cup teriyaki sauce
  • 1/4 cup barbecue sauce

Main ingredients

  • 2 cups cut-up fresh pineapple
  • 1 piece red bell pepper, chopped into 1-inch pieces
  • 1 pound boneless and skinless chicken breasts, chopped into cubes

Instructions
 

Preparation

  • Toss the ginger, garlic, teriyaki, and barbecue sauces together in a big bowl and mix well.
  • Add in the pineapple, chicken, and bell pepper, and coat everything in the sauce mix.

Cooking

  • Scoop the coated chicken mix into your air fryer basket, set to 400°F, and cook for 11 minutes.
  • Stir the mixture halfway through cooking to ensure even cooking.
  • Check that the chicken has reached an internal temperature of 165°F before serving.

Serving

  • Serve hot chicken and veggies over rice as desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the microwave or air fryer. Experiment with different vegetables or add spices for personalized flavors.
