Ingredients
  

Cheese and Zucchini
  • 1 block halloumi cheese, cut into sticks (225 g / 8 oz)
  • 2 medium zucchini, sliced lengthwise into thin ribbons (300 g)
Honey-Mustard Glaze
  • 2 tablespoons honey (40 g / 30 ml)
  • 1 tablespoon Dijon mustard (15 g / 15 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1/2 teaspoon black pepper (1 g)
  • 1/2 teaspoon chili flakes (optional, 1 g)
  • 2 grams Fresh thyme leaves for garnish

Method
 

Preparation
  1. Preheat your air fryer to 375°F / 190°C.
  2. Using a vegetable peeler or mandoline, slice the zucchini into long, thin ribbons.
  3. Pat the zucchini dry with paper towels to remove any excess moisture.
  4. In a small bowl, mix the honey and Dijon mustard together until you have a smooth consistency.
Assembly
  1. Take each halloumi stick and wrap it with 1–2 zucchini ribbons, overlapping slightly to keep them secure.
  2. Lightly brush the zucchini-wrapped halloumi with olive oil, then apply the honey–mustard mixture generously.
  3. Sprinkle with black pepper and chili flakes if you’re using them.
Cooking
  1. Arrange the wrapped halloumi in the air fryer basket in a single layer, seam-side down.
  2. Air fry for 10–12 minutes, turning them halfway through until the zucchini is crispy and the halloumi becomes golden and soft.
  3. Remove them from the air fryer and garnish with fresh thyme. Serve warm.

Notes

To elevate tasting experience, serve this dish with a fresh salad, grilled vegetables, or a light dip like tzatziki. For perfect results, ensure zucchini ribbons are dry before wrapping.
