  • 2 cups cooked quinoa
  • 1 cup diced chicken breast
  • 1 bell pepper, chopped
  • 1 cup broccoli florets
  • 3 tablespoons olive oil
  • Salt and pepper, to taste

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast and season with salt and pepper. Cook until golden brown, about 5 minutes.
  3. Stir in the chopped bell pepper and broccoli florets. Sauté for another 5–7 minutes or until the veggies are tender.
  4. Add the cooked quinoa to the skillet and mix well. Cook for an additional 3 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary before serving.

Notes
