  • 2 cups mixed vegetables (carrots, bell peppers, broccoli) Can use any preferred vegetables.
  • 1 cup cooked pasta or rice Quinoa or zucchini noodles can be used for a low-carb option.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 1 teaspoon Italian seasoning
  • 1 cup marinara sauce

Preparation

  • Begin by heating olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
  • Next, add the diced chicken breast. Cook until it’s no longer pink and starts to brown, about 5-7 minutes.
  • Toss in the mixed vegetables and cook for another 5 minutes, allowing them to soften.
  • Stir in the cooked pasta or rice, salt, black pepper, and Italian seasoning.
  • Pour in the marinara sauce and mix everything well. Allow it to simmer for about 10 minutes so the flavors can meld together.

Notes
