  • 4 pieces tortillas
  • 1 cup shredded cheese
  • 1 cup chopped mixed vegetables (like bell peppers, onions, and spinach)
  • Salsa (for serving)

Garlic Lemon Shrimp Instructions

  • Heat olive oil in a skillet over medium heat.
  • Add garlic and sauté for 30 seconds.
  • Toss in the shrimp and cook for about 2-3 minutes on each side until they turn pink.
  • Squeeze lemon juice over shrimp and garnish with parsley. Serve with pre-cooked rice or quinoa.

Veggie-Packed Quesadillas Instructions

  • Heat a non-stick skillet over medium heat.
  • Place one tortilla in the pan and layer half of it with cheese and mixed vegetables. Fold the tortilla in half.
  • Cook for 2-3 minutes until golden brown, flip, and cook the other side for another 2-3 minutes.
  • Repeat with remaining tortillas and serve with salsa.
