Preparation

  • Place the lemon juice and zest, pitted dates, almonds, unsweetened coconut, and quick oats into a food processor or powerful blender in the order listed.
  • Pulse and blend until the mixture reaches a thick paste-like consistency.
  • If the mixture is too dry and not sticking together, add warm water, one tablespoon at a time, until desired consistency is achieved.
  • Roll the mixture into evenly sized balls using your hands.
  • For extra texture and flavor, roll the balls in additional unsweetened coconut if desired.

Notes

Store the energy balls in an airtight container in the refrigerator for up to one week. For longer storage, freeze for up to three months with parchment paper between layers to prevent sticking.
