  • 500g Mutton (bone-in pieces)
  • 3 tbsp Oil or Ghee

  • 2 Tomatoes, chopped
  • 1 tbsp Ginger-garlic paste
  • 2–3 Green chilies (slit)
  • 1/2 cup Curd (whisked)
  • Fresh coriander leaves (for garnish)
  • 1 Bay leaf
  • 1–2 Cinnamon sticks
  • 2–3 Cloves
  • 3–4 Green cardamoms
  • 1 Black cardamom (optional)
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 1.5 tsp Red chili powder
  • 2 tsp Coriander powder
  • 1 tsp Garam masala
  • Salt to taste

Directions:

  1. Heat oil or ghee in a heavy-bottomed pot or pressure cooker.
  2. Add whole spices and sauté for a few seconds until aromatic.
  3. Add sliced onions and sauté until golden brown.
  4. Mix in the ginger-garlic paste and green chilies. Cook until the raw smell disappears.
  5. Add chopped tomatoes and cook until they soften and oil begins to separate.
  6. Add turmeric, red chili, coriander powder, and salt. Cook for a minute.
  7. Add mutton pieces and sauté on high flame for 5–7 minutes until browned.
  8. Lower the flame and add the whisked curd. Mix well and cook for another 5 minutes.
  9. Add 1 to 1.5 cups of water. Cover and pressure cook for 3–4 whistles on medium flame (for tender mutton) OR slow cook in a pot until the meat is soft and the gravy thickens.
  10. Add garam masala and simmer for 5 minutes.
  11. Garnish with coriander leaves.

Tip: You can add a splash of lemon juice at the end for freshness. For a thicker gravy, reduce the water slightly or simmer longer uncovered.
