Peppermint Snowball Cookies

2 sticks (1 cup) unsalted butter, softened
1/2 cup powdered sugar, plus more for rolling
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup crushed peppermint candies or candy canes

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy. Beat in the vanilla extract and peppermint extract. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the crushed peppermint candies. Roll the dough into 1-inch balls and place them on the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes, then roll them generously in additional powdered sugar while still warm. Transfer to a wire rack to cool completely. Roll the cooled cookies in powdered sugar one more time before serving, if desired.
