How to Make Kroll’s Cookies
Ingredients:
- 1 1/4 cup All-Purpose Flour
- 3/4 cup Cake flour*
- 1 tsp. corn starch
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup cold, unsalted butter, cubed
- 1/2 cup light brown sugar, packed (dark brown works too!)
- 1/4 cup white granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tsp. vanilla extract (optional, see recipe notes)*
- 2 cups milk chocolate chips** (or semi-sweet, use less chocolate if you prefer)
Directions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the all-purpose flour, cake flour, baking soda, baking powder, corn starch, and salt. Set it aside.
- Place the cubed butter in the bowl of a stand mixer and secure the paddle attachment. Mix on medium-low speed for about 30 seconds.
- Add in the brown sugar and mix for another 30 seconds. Next, add the white sugar and mix again for 30 seconds until light and fluffy.
- Add the egg and egg yolk (and vanilla extract if you’re using it) and blend until combined. Use a rubber spatula to scrape down the sides if needed.
- With the mixer on low speed, gradually add the flour mixture a little at a time until fully incorporated. Then, fold in the chocolate chips until well mixed.
- Measure out about 6 cookies, each weighing around 5.7 oz. (a bit smaller than a fist). Keep them tall and do not flatten them. Place them on a cookie sheet lined with a silicone mat or parchment paper.
- Bake the cookies for 10-12 minutes until the tops are golden brown. Remember to take them out before you think they are done!
- Let the cookies rest on the cookie sheet for at least 15-30 minutes. Once they have rested, transfer them to a cooling rack to cool completely. Enjoy with a tall glass of milk!

FAQs
1. Can I use different types of flour?
Yes, you can use a combination of all-purpose flour and whole wheat flour if you want a healthier option, but it may change the texture.
2. What if I don’t have cake flour?
You can replace cake flour with more all-purpose flour, but the texture might not be as cake-like.
3. How do I know when the cookies are done?
Look for a golden-brown top but take them out while they’re still slightly soft in the middle. They will continue to cook as they cool.
