How to Make Fresh Raspberry Pie

Making your own Fresh Raspberry Pie at home is easier than you might think. Follow these simple steps for a delicious result.

Ingredients:

  • 1 1/4 cups (142g) King Arthur Golden Wheat Flour
  • 1 tablespoon (9g) buttermilk powder, optional; for tender texture
  • 1 tablespoon confectioners’ sugar
  • 1/2 teaspoon table salt
  • 1/4 teaspoon baking powder
  • 3 tablespoons (25g) vegetable shortening
  • 4 tablespoons (57g) unsalted butter, cold
  • 2 tablespoons (28g) orange juice*
  • 2 to 3 tablespoons (28g to 43g) ice water
  • 6 cups (723g) raspberries, fresh preferred
  • 2 tablespoons (28g) lemon juice, fresh preferred
  • 1/2 cup (113g) water
  • 1 cup (198g) granulated sugar*
  • 1/3 cup (85g) Instant Clearjel

Directions:

  1. Make the crust:

    • Whisk together the flour, buttermilk powder (if using), sugar, salt, and baking powder in a medium bowl.
    • Add the shortening and mix until crumbly.
    • Add the cold butter and mix roughly with your fingers or a pastry cutter, leaving big chunks of butter.
    • Sprinkle the orange juice over the dough and toss to moisten. Add ice water, a tablespoon at a time, until the dough holds together without being dry.
    • Shape the dough into a disk on a floured surface. Roll on its edge to smooth the edges. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. Prebake the crust:

    • Preheat the oven to 400°F (200°C).
    • Roll out the pastry to a 13" circle and transfer it to a 9" pie pan, trimming the edges. Flute the edges and chill for 10 minutes.
    • Line the crust with foil or parchment paper and fill with weights or dried beans. Bake for 20 minutes.
    • Remove the foil and weights, then bake for another 10 to 20 minutes until golden brown. Cool completely.
  3. Make the filling:

    • Mash 2 cups of raspberries in a bowl. Stir in lemon juice and water.
    • In another bowl, whisk together the sugar and Instant ClearJel, then sprinkle over the raspberry mixture and stir.
    • Fold in about 3 cups of the remaining berries, reserving 1 cup for the top.
    • Spoon the berry mixture into the cooled pie shell and top with the reserved berries.

How to Serve Fresh Raspberry Pie

Serve your Fresh Raspberry Pie chilled or at room temperature. A scoop of vanilla ice cream or a dollop of whipped cream on top can elevate the flavor even more. This pie makes a stunning centerpiece for any dessert spread.

Tips to Make Fresh Raspberry Pie

  • For the best flavor, use fresh raspberries when they are in season.
