How to Make Chocolate Covered Cherry Brownie Bombs

Ingredients:

  • 18.3 ounces box of chewy fudge brownie mix (your favorite brand, I used Duncan Hines)
  • ½ cup of vegetable oil
  • ¼ cup of water
  • 2 large eggs (room temperature)
  • 12 ounce can of whipped chocolate frosting (your favorite brand, I used Betty Crocker)
  • 10 ounce jar of maraschino cherries (drained, stems removed, and patted dry)
  • 18 ounces of chocolate almond bark

Directions:

  1. Preheat the oven to 350°F. Generously spray a 9×13-inch baking dish with baker’s spray (Baker’s Joy or generic version).
  2. Add the brownie mix, vegetable oil, water, and eggs to a medium-sized mixing bowl. Stir just until combined, do not over-mix. Evenly spread the brownie batter into the prepared baking dish. Bake according to the package instructions. Allow the brownies to cool completely.
  3. Crumble ½ of the cooled brownies into a large mixing bowl. Spoon ½ of the whipped frosting on top of the crumbled brownies. Crumble the remaining brownies on top of the frosting and spoon the remaining frosting on top of the brownies. Use a large spoon to combine the brownies and frosting until an even consistency.
  4. Line a baking sheet with parchment paper.
  5. Use a 1½ tablespoon cookie scoop to scoop the brownie mixture. Roll it into a ball. Slightly flatten the ball and use your thumb to make an impression in the center. Place 1 cherry into the depression. Fold the brownie over the cherry and roll it into a ball to seal the cherry inside. Place on the prepared baking sheet. Repeat for the remaining mixture. Chill the brownie balls in the refrigerator for 1 hour.
  6. Just before coating, break the almond bark into pieces and place in a microwave-safe bowl. Microwave in 1-minute intervals, stirring in between, until completely melted and smooth.
  7. Dip each brownie ball into the melted almond bark. Use a spoon to coat it, then lift with a fork, tapping to remove any excess chocolate. Place back on the parchment paper. Repeat with the remaining brownie balls. Chill until ready to serve.

How to Serve Chocolate Covered Cherry Brownie Bombs

These delicious brownie bombs are best served chilled. Arrange them on a pretty platter or in a cupcake liner for an appealing presentation. They make great finger foods, perfect for parties or casual get-togethers.

How to Store Chocolate Covered Cherry Brownie Bombs

Store any leftover brownie bombs in an airtight container in the refrigerator. They should stay fresh for about a week. If you want to keep them longer, you can freeze them for up to two months. Just thaw them in the refrigerator when you’re ready to enjoy them again.

Tips to Make Chocolate Covered Cherry Brownie Bombs

  • Make sure to pat the maraschino cherries dry. This will help prevent excess moisture from making the brownie mixture soggy.
  • Don’t overmix the brownie batter, as this can make them tough.
  • Feel free to play around with different flavors of frosting or chocolate coating for a fun twist.

Variation

You can try using other fruits, such as raspberries or strawberries, instead of cherries. Additionally, you can substitute the chocolate almond bark with white chocolate for a different flavor profile.
