Directions:

  1. Preheat your oven to 320°F (160°C). Grease and line an 8-inch round cake pan with parchment paper. Wrap the outside of the pan with aluminum foil to make it waterproof since we will bake it in a water bath.
  2. In a heatproof bowl over a double boiler, melt the cream cheese, butter, and milk together. Stir until the mixture is smooth. Remove from the heat and let it cool slightly.
  3. Sift the cake flour and cornstarch into the cooled cheese mixture. Mix until it’s combined. Then add the egg yolks and vanilla extract, mixing until smooth. Set this mixture aside.
  4. In a clean, dry bowl, beat the egg whites with cream of tartar (if using) until they are foamy. Gradually add sugar while beating, until soft peaks form (they should not be stiff).

  6. Pour the batter into the prepared pan and smooth out the top. Place this cake pan inside a larger pan and fill the outer pan with hot water (about 1 inch deep). Bake for 60–70 minutes, or until the top is golden brown and the cake has set.
  7. Turn off the oven and leave the cake inside with the door slightly ajar for 15 minutes; this helps prevent cracking. Once done, remove from the oven and let it cool completely before unmolding.
  8. If desired, dust with powdered sugar. Slice and enjoy the light and fluffy texture of your Japanese cheesecake!
